Undisgorged raw sparkling wine made from the Zenit variety using a traditional method. The base wine was produced in 2020, and the sparkling wine was crafted in 2021. Following the méthode traditionnelle, the second fermentation took place in the bottle. The final stage of sparkling wine production, disgorging (removal of sediment), was omitted, as they appreciate the presence of the lees.
