Depending on the vintage, he macerates the grapes on their skins for varying lengths of time, presses them together with stems and stalks, ferments the must spontaneously, ages the wine on its lees for six months, and finally bottles it unfiltered with minimal sulfur addition.
Juicy and full on the palate, with a volcanically smoky nose and notes of apple and lemon, it is refreshingly drinkable, boasting a creamy, gently mellow mouthfeel.
